This distillate takes its name from the grape skins, called "orujos" in Cantabria. It is obtained with alcohol diluted in water. Alcohol is obtained by distilling the pomace and then cooling its vapor to reduce it back to a liquid.
Liébana is the most popular area of Cantabria as regards the production of this liquor, with a tradition that goes back to the Middle Ages. Nowadays, the famous copper stills are still used for this traditional production.
