The best known sweet in Cantabria is undoubtedly our beloved sobao. It has its origins in the Pasiegos Valleys back in the Middle Ages. Its original ingredients, bread, eggs, butter and honey, could not be missing in any house in the region, and it was with a combination of these that this gastronomic treasure, recognized as one of the wonders of Spanish gastronomy, was created.
Nowadays, in Cantabria we have a multitude of sobaos elaborating houses. Most of them are located in the Pasiegos Valleys, specifically in Selaya and Ontaneda.
The authentic sobao from Cantabria has a yellowish color inside and a slightly toasted surface, it is dense, spongy and slightly juicy. A high quality piece of pastry, with a robust character and a great source of pleasure and energy.
