The best-known sweet in Cantabria it is undoubtedly our dear Sobao. It originated in the Pasiego Valleys back in the Middle Ages. Its original ingredients, bread, eggs, butter and honey, could not be missing in any house in the region, and it was with a combination of these that the creation of this gastronomic treasure recognized as one of the wonders of Spanish cuisine.
As of today, in Cantabria we have a multitude of houses that manufacture sobaos. Most of them are found in the Pasiego Valleys, specifically in Selaya and Ontaneda.
The authentic Sobao from Cantabria has a yellowish color inside and a slightly toasted surface. It is dense, fluffy and slightly juicy. A high-quality piece of pastry, robust character and a great source of pleasure and energy.
