Another product that has an ever-increasing national and international expansion is our cheese.
It is in the 10th century when the first known mention of the importance of cheese in Cantabria appears, in a text of Santo Toribio de Liébana. Since then, we have always maintained this tradition.
Today we have around 50 cheese dairies located in rural areas, where around 100 different delicious varieties are produced.
Cantabrian cheese is made mainly from cow's milk, although there are also cheeses made from sheep and goats that graze mainly in Liébana, within the Picos de Europa National Park.
Three types of Cantabrian cheeses can be purchased with protected designation of origin: Queso de Cantabria, Quesucos de Liébana and the well-known blue Queso Picón Bejes-Tresviso. Cantabrian cheeses are strongly influenced by the landscape where their animals graze. A landscape with wide and extensive meadows.
